Strawberry Shortcake Cookies

There is something about the smell of ginger cookies baking that just makes my house smell like Christmas. Now I like a good gingersnap cookie as good as the next person but I am a huge fan of the softer ginger cookies that melt in your mouth. My issue with most of them is they are loaded with cups of white sugar, oil and or butter to achieve that texture. I have played around with a few recipes in hopes to master all the components of a good ginger cookie while still keeping it nutritious.

7 Frozen Treat Recipes that are sure to keep you cool this summer.

What is summer without a little sand, water, and of course ice cream? Frozen treats on a hot day that cool you down and feed the soul. However, the truth is dairy is not everyone’s friend. There have been many summer lake days that my child would say they felt sick and needed to lay down after enjoying a big ice cream cone at the beach. As a mom, I wanted to find a way for him to enjoy the frozen treats of summer without feeling sick and ruining his day after. Food should energize you and make you feel amazing, not laying in bed sick.

I began to play around with a few recipes in the kitchen. There were many “failed” attempts that my kids would take one bite and say they did not like it (my toughest critiques always!). However, after some trial and error I began to produce frozen desserts without dairy and with minimal to no added sugar that not only made them happy but I too enjoyed them so much more than conventional desserts. I am sharing with you 7 frozen treat recipes I love to make for my family on a hot day. Enjoy!

Lemon Lavender Pound Cake (Gluten-free, Sugar-free & Dairy-free versions)

Whenever I see lemon lavender lemonade, cookies, or ice cream I cannot pass by, I have to buy some. The sweet citrus of the lemons paired with the earthy, floral undertones of mint in lavender  is one of the most perfectly paired culinary flavour duos in my opinion. It also makes this naturally gluten-free cake a light and refreshing dessert at the end of your summer meal or a delightful accompaniment to an afternoon ice tea with friends. The pound cake can also be made ahead of time and it freezes well. This means that if you have unexpected guests or are invited to a potluck you can take one out to thaw and decorate as desired. You can also make this cake Keto or sugar-free friendly but using an alternative sweetener and it can be dairy-free with coconut yogurt. These simple variations allows the cake to adapt to a variety of dietary needs.

5 Killer No-Bake Fat-Bomb Recipes

‘Fat Bombs’ and weight loss may not sound like they belong together in the same sentence but they actually do. The 1980’s-1990’s diet industry marketing did a great job of placing fear in the hearts of everyone where fat is concerned. The old idea that “fat makes you fat”, has been a hard one to shake off for many people. You can still see “low-fat” products lining the grocery store even though we know now that fats are essential for hormone balance, brain health, energy, and metabolism. Now, the catch is that NOT all fats are created equal and higher fat diets work best as it relates to weight-loss goals when used strategically in a low carb diet.
