Healthy Cinco de Mayo Dessert

To end your Cinco de Mayo dinner, you want a really delicious dessert to finish the evening off. As I was scrolling through the many pages of Mexican-inspired desserts I noticed that the food became less whole and fresh and quickly turns to cakes soaked in heavy cream, fried pastry and desserts, and a ton of refined sugars. Now these yummy treats to enjoy but if you want to finish your meal off with something a little lighter on the waistline and digestive track that does not leave you feeling bloated and yucky after, I created something to do the trick

Avocado “Ice Cream”

If you have not yet tried avocado ice cream I strongly suggest you give it a try. Whenever I serve it as a dessert for company, I rarely mention what it is. I sit back and watch everyone try and scrap the bowl with their spoons to capture each little bit. As the questions begin, I enjoy telling people that there is No dairy, No white sugar, and No, I don’t own an ice cream maker.

Avocados are a total superfood, once upon a time in the low-fat movement of the 80’s and 90’s people worried about eating them for their high fat content. However, we have come a long way and have a deeper understanding in that not all fats are created equal. Our brain, nervous system, hormones and skin need healthy fats such as the monounsaturated fats in avocados to properly function.
