These 5 recipes are perfect for your Valentine’s Day Celebration! These can be lunchbox treats, party snacks, or a sweet way to finish off your dinner. These recipes are inclusive in that they can meet many dietary needs (i.e. naturally gluten-free, plant-based, dairy-free), and are all made of nutrient-dense whole foods. If you make any of these please let me know how you enjoyed it, or take a picture and tag @rejoice on social media. I would love to see your creation. Enjoy!

1. Heart-Shaped Watermelon Pizza Party

These watermelon heart-shaped pizzas are not only delicious, and packed with essential vitamins & minerals but they are so fun to make! I spent an afternoon with my kids making them, we laughed and had a great time decorating (the same quality time you get from decorating cookies, but with a ‘healthy” spin). They were able to let their creative juices go wild and I gave them no guidance but let them be free to do their thing. When we were done, we ate a bunch! Then placed the rest in an air-tight glass container and the kids proudly took them as a healthy valentines lunch box treat. My kids were proud to show off what they made and I guess everyone wanted one!  GRAB THE FULL POST, RECIPE, & PICTURES HERE

2. NO-BAKE RED VELVET TRUFFLES

To be perfectly honest I am not sure what to say about these truffles without completely bragging…. haha. I began with the idea that I wanted to create some healthy valentine recipes. I wanted people to indulge in a sweet treat at valentines day that was not a form of chemicals or wax posing as chocolate. As, always I wanted the treat to love your body back, versus causing it harm as many of today’s commercial desserts can.

I choose sunflower butter (but you can use any nut or seed butter you like), as sunflower seeds are extremely high in Vitamin E. Vitamin E is known for its anti-inflammatory and cardiovascular health benefits. Vitamin E has also been studied for its ability to move through the move and neutralize free radical damage and reduces oxidative cholesterol. Sunflower seeds are also packed with Vitamin B’s, magnesium, and selenium which are all heart healthy nutrients. So when I say these truffles will love your heart- I mean it. 3. Red Velvet Cupcakes with a Strawberry Cream Cheese Glaze

Love is in the air, which means Red Velvet Cake is a must. Are you a red velvet cake fan? If so,  you are going to love this recipe. These easy one-bowl red velvet cupcakes are the most delicious you’ll find and you won’t believe how fast + simple they are to make! These are great without the glaze as well! You can make the glaze less sweet by omitting the strawberries as well. Often, I find that I love red velvet cake but the commercial versions are SO sweet and dense and sit heavy in my digestion, I can never finish the whole piece. These Red Velvet Cupcakes are the perfect few bites of that red velvet cake with a slightly lighter texture, but with no sacrifice on flavour! GRAB THE FULL POST & RECIPE HERE

4. No-Bake Protein Brownie Kabobs

These are a fun and easy snack that are perfect for an afterschool snack, dessert, potluck or just cause you want one! You can make the brownie bites OR use your fav Lara Bar to roll up into balls to make these faster! GRAB FULL POST & RECIPE HERE

5. Strawberries & Cream Cheesecake (DF/GF/V)

I get really excited when I make a raw dessert. Even though I have been making them for years, I still get amazed after each creation how rich and delicious they taste without any dairy. I get excited curating desserts using whole foods, natural sweeteners, and dairy-free alternatives to share with my friends and family. This Strawberries & Cream “Cheesecake”, is a great way to enjoy the beautiful strawberries growing in my garden right now. However, you can change the fruit to adjust with seasons and create new flavors of your own. This cake is packed with healthy fats, vitamin C, protein, fiber, and minerals like calcium and zinc. I always love finding ways to indulge in a tasty dessert and no feel bloated after, this dessert does the trick. GRAB THE FULL POST & RECIPE HERE

Enjoy! JO
