Grilled Caesar Salad (Vegan, GF)

This is a healthy twist on a classic caesar salad. During the summertime, I am not a fan of turning my oven on. I usually keep things raw & fresh or I love to do my cooking outside on the grill! Grilling the veggies for this salad just enhances the flavors and warmth of this salad. I love how the char of the romaine lettuce and the tangy dressing taste together in your mouth. 

Turmeric & Almond Butter Chocolate Chunk Cookies

The first reaction to this recipe may be that I have finally crossed the line by adding turmeric into my cookies, but you really need to try this moist naturally gluten-free cookies before judging them. These cookies are such a treat! Truthfully, I have a rule where I only bring almond butter into my house for a specific recipe because it is my weakness. I will literally eat the whole jar in a matter of 2 days and then cross the line from healthy fats to consuming a week’s worth of healthy fats in one sitting.

Roasted Strawberries & Rhubarb with Coconut Whip Cream

Strawberry and rhubarb combinations always bring me back to a happy time in my childhood where I would help my Papa in his garden and then my Nana making jams and pies in the kitchen. My Nana made the best strawberry and rhubarb pie and jam I ever tasted. One bite of this fruit pairing brings me right back to this time and always puts a smile on my face.

“Healthified” Chicken & Waffles

I pose the question.. can you make a healthier version of chicken & waffles? Haha. I have a very dear friend visiting me from New York and I wanted to make chicken and waffles for her as I know she likes it, but you know me! I need to attempt to healthify this recipe (at least to some degree). I always talk about balance in my posts, I feel in order to develop a healthy relationship with food you need to not feel restricted, you need to enjoy food and celebrate with others without feeling guilty afterward.
