So, I know the initial reaction by most when you try to “healthify” a traditional Mac & Cheese is… “No Way!”. But this recipe is soo easy and so good. I often don’t tell people what is inside, I serve it like any other mac & cheese dish and watch everyone devour the creamy cheesy sauce before I tell them it’s naturally gluten-free and vegan-friendly!
The words “condiments” and “nutrition”, typically do not go hand-in-hand. Convention condiments are loaded with high-fructose corn syrup, chemicals, coloring, preservatives, sugar additives in various different names, and much more. Popular diets and programs always omit condiments leaving participants able to use mustard and salsa as their ways of flavoring their foods, which is never a sustainable way of eating.
Enter.. a new rhubarb garden recipe! The sweetness of the blueberries pairs lovely with the tart rhubarb. I have adapted the recipes several times finding ways to reduce the sugar more and more and still have it be a lovely treat. Also adding in plant-based protein, fiber, and healthy fats help to balance these bars to move from a dessert to a healthy snack. This also helps to slow blood-sugar spikes that can occur when consuming fruits. I will enjoy one with my morning smoothie or as a 3 pm snack when you feel your energy crashing.
These chips are crunchy, sweet, and totally addicting. The cinnamon-sugar topping is optional too, for an everyday snack I will just bake the apples plain or with a little cinnamon, so you can choose to omit the sugar entirely. It is important that you slice them thin, if they are left too thick then they turn mushy and will be in your over for hours and hours. A little trick is once the time is up I actually don’t remove the sheet to cool on the counter but turn the oven off and let them cool down as the oven cools down. This ensures they are nice and crunchy.
