Hormone Supporting Chipotle Chicken Bowls
As part of the Hormone Supporting Recipe Series, this recipe is so simple and packed with Hormone Supporting Nutrients! It also makes for a great weeknight meal or a meal prep lunch with how quick it is to toss together. You could also layer it into a mason jar, for a high-protein grab'n'go lunch.

Ingredients
Bowl
- 1/2 cup rice or quinoa
- 1/4 cup cilantro
- 1 medium lime, juiced
- 1/8 cup corn
- 1/8 cup beans I used black beans
- 6 oz chicken breast, cooked or protein choice
- 1 tsp chipotle powder
- salt & pepper to taste
- 1/2 cup veggies of choice I used sliced cherry tomatoes
- 1/4 avocado, chopped
Dressing
- 1/4 cup Greek yogurt or sour cream
- 1 large lime, juiced
- 1 tsp-tbsp Chipotle Spice based on how hot you like it
- 2 tbsp cilantro chopped
- salt & pepper to taste
Instructions
- make rice according to package, as it cools as lime & cilantro & set aside
- mix sliced protein with oil, chipotle powder, salt & pepper & cook till done
- mix all dressing ingredients together. Chop veggies, and add to a bowl with rice and dressing. Serve with additional lime wedges and enjoy
