You have most likely seen versions of these skewers before. These are one of my go-to appetizers as they are simple, easy and highlight beautiful tomatoes. For a holiday potluck or New Year’s eve appetizer, these are one of my favorites bites to lighten things up. Any cherry tomatoes will do but I like to get my hands on heirloom varieties such as San Marano, Brandywine, lollypop or gardeners delight. Yummy!
Tomatoes are a very nutrient-rich food as they are a great source of a phytonutrient called lycopene. Lycopene is an antioxidant that has received a great deal of press in relation to promoting healthy immune function and supporting bone and heart. One cup of tomatoes has 24.66mg of Vitamin C, 426.60 mg of potassium, and 14.22mg of Vitamin K.
