Egg Nog Chia Pudding

This is a fun way to infuse your chia pudding with the flavors of the holidays. Chia pudding makes a great breakfast, afternoon snack, or tasty dessert based on the flavors and liquid you add to them.

I’m always amazed at the nutrient density of these tiny seeds. Chia is the highest plant-based source of omega 3, protein and fiber. Chia seeds are also packed with vitamins, minerals, and antioxidants. Adding chia to your diet is great for those that follow a gluten-free diet while supporting weight-loss, bone, digestive and cardiovascular health along with so many other benefits. To learn more about these benefits and how to incorporate them into our diet check out the article here.

Egg Nog Chia Pudding

Get into the holiday spirit with this tasty gluten-free, vegan pudding.
Prep Time 2 minutes
Total Time 17 minutes
Servings 2 servings

Ingredients

  • 3 tbsp chia seeds
  • 1 cup almond nog I like earth's own brand or use dairy egg nog
  • 2 tbsp coconut flakes
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp maca powder
  • 1 tsp vanill

Instructions

  • Place everything in a bowl and mix until well combined
  • Let it rest for 15-30 minutes with a papertowel ontop, so the chia seeds can expand and become gelantenous.
  • Scoop into a cup and enjoy. For additional toppings check out the recipe notes below.

Notes

Keeps well in the fridge in an airtight container for 3-5 days.
For more of a dessert, I like to add a spoonful of coconut whip cream and additional cinnamon for fun.
