I have a bit of an obsession with Energy Balls in case you have not noticed. They are just so easy! Typically, it involves soaking some nuts and/or dates, then dumping everything into a blender, rolling them into balls and viola! you have a sweet, satisfying snack anytime.
Energy balls are my favorite snack for that 3 pm energy crash that most of us hit. I find after work if I don’t have something premade like this to grab, this is where I don’t make wise choices. You know… you stand in the fridge randomly having bites of cheese right off the block or eating a handful of stale baking chocolate chips from the pantry. So for me, I can always find time to make these and keep them in the fridge even during the busiest weeks.
Most energy ball recipes are also really basic and they allow for experimentation and creativity when it comes to flavors. Having oats, dates, nuts, and seeds, leaving them plain or rolling them in superfoods, ensures these little treats are never boring. Kids love them as an alternative lunch box snack that they roll and help make themselves. It’s an affordable substitution for some of those high priced natural granola bars you buy for your lunch kids.
Carrot Cake Energy Balls
- 2-3 medium carrots, grated
- 6 dates, pitted, soaked
- 1/4 cup cashew or almond butter
- 1 cup organic rolled oats GF version as needed
- 1 tsp cinnamon
- 1 tsp allspice
- 1" piece fresh ginger, peeled
- 1/8 tsp sea salt
- Soak the dates in warm water. If you are in a hurry 15 minutes will work, if you have more time, I like to soak them for 1-2 hours. Remove pits, drain the water, and place them in a blender or food processor.
- Grate the carrots and set them aside.
- Add the remaining ingredients (except grated carrots) and process for about 2 minutes until everything is well blended.
- Add the carrot and mix until everything is well combined. Take about 1 tbsp of the mixture and roll it in your hands into a ball.
- You can freeze them like this or roll them in whatever you like.
