I’ve perfected so many freezer meals over the years, but here are the one’s I come back to again and again. These are the ones my family actually asks for. The ones that work with literally everything you throw at them. They’re versatile enough for a weeknight sheet pan dinner, to toss in a crockpot, into an air-fryer or on a grill.
Nutrition doesn’t have to be complicated when life is already pulling you in a hundred directions.

4 Easy Freezer Meals Ready in 15 Minutes: Tuscan Chicken, Butter Chicken, Beef Stroganoff & Farmer's Sausage Bowls

Four complete freezer meal options that take 15 minutes to prep and weeks to cook. Each bag makes 4 servings. Simply layer ingredients in the exact order, squeeze out air, lay flat, and freeze. When you're ready to eat, choose sheet pan or slow cooker method.

Ingredients
  

MEAL 1: BEEF STROGANOFF (Makes 4 servings)

  • 1.5 lbs beef stir fry pieces (or sirloin strips)
  • 1 medium white onion, diced
  • 3 cups mushrooms, chopped
  • 1 cup greek yogurt or DF yogurt
  • 2 tbsp dijon mustard
  • 1 cup bone broth or stock of choice
  • 2 cloves garlic, minced
  • salt & pepper to taste

MEAL 2: BUTTER CHICKEN (Makes 4 servings)

  • 1.5 lbs chicken breast, cubed
  • 1 medium onion, diced
  • 1 can (14oz) diced tomatoes
  • 2 tbsp ghee or butter or coconut oil
  • 2 tbsp tomato paste
  • 2 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1 tsp honey
  • 1 tbsp fresh ginger, grated or 1 tsp dried ginger
  • 3 cloves garlic, minced
  • salt & pepper to taste

MEAL 3: TUSCAN CHICKEN (Makes 4 servings)

  • 1.5 lbs chicken breast
  • 1 tbsp Italian seasoning
  • 2 clove garlic minced
  • salt & pepper to taste
  • 2 tbsp fresh oregano, chopped
  • 1/4 cup olive oil
  • 1/8 cup dark balsamic vinegar I love Nelson Olive Oil, see notes
  • 1 can (14oz) artichoke hearts, drained and halved
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach

MEAL 4: FARMER'S SAUSAGE BOWLS (Makes 4 servings)

  • 1.5 lbs chicken sausages, chopped use GF as needed
  • 1 medium sweet potatoes, diced
  • 1 medium red onion diced
  • 2 bell peppers any color, diced
  • 2 cups broccoli florets
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions
 

  • TO PREP & FREEZE:
    Reusable freezer bag with layered sausage bowl ingredients: gluten-free chicken sausages, diced sweet potatoes, bell peppers, broccoli, red onion, and Dijon honey mustard dressing
  • Layer ingredients in a reusable freezer bag in the exact order listed above for each meal. For delicate ingredients like spinach in Tuscan Chicken, place them at the very top of the bag so they stay fresher. Squeeze out as much air as possible before sealing. Lay bags flat in the freezer. These keep beautifully for up to three months.
  • TO COOK - SHEET PAN METHOD:
    Reusable freezer bag with layered butter chicken ingredients: cubed chicken, diced onions, tomatoes, coconut milk, and spices ready to freeze
  • Thaw overnight in refrigerator. Preheat oven to 425°F. Pour entire contents of bag onto a sheet pan in a single layer. Bake for 15-20 minutes until protein is cooked through and vegetables are tender-crisp.
  • TO COOK - SLOW COOKER METHOD:
    Reusable freezer bag filled with layered beef stroganoff ingredients: beef pieces, mushrooms, onions, and yogurt-based sauce ingredients ready for freezing
  • Thaw overnight in refrigerator. Pour entire contents into slow cooker. Cook on low for 4-6 hours until protein is tender and vegetables are soft.

SERVING OPTIONS:

Beef Stroganoff: Serve over egg noodles, rice, or cauliflower rice.
Butter Chicken: Serve over rice, cauliflower rice, with naan, or over spiralized zucchini.
Tuscan Chicken: Serve over pasta or quinoa.
Farmer's Sausage Bowls: Serve as a complete dinner on its own or over rice or cauliflower rice if you prefer.

STORAGE:

Freezer bags keep beautifully for up to three months. Once thawed, keep leftovers in the refrigerator for up to three days. These meals freeze flat for easy stacking and thaw quickly overnight.

Squeeze out as much air as possible before freezing to prevent freezer burn. All of these meals work beautifully with both sheet pan and slow cooker methods.
