5 Easy Chicken Marinades for Busy Weeknights (Freezer Meal Prep)

Let’s get honest, Fall can be chaotic. Back to school, sports schedules, work ramping up, and just getting back into routines after summer ends. Everything hits at once and dinner becomes this thing you’re scrambling to figure out every single night.
I’ve perfected so many marinades over the years, but here are the five I come back to again and again. These are the ones my family actually asks for. The ones that work with literally everything you throw at them. They’re versatile enough for a weeknight sheet pan dinner, to toss in a crockpot, into an air-fryer or on a grill.
Nutrition doesn’t have to be complicated when life is already pulling you in a hundred directions.
Grab a big pack of chicken, pull out some reusable freezer bags, and spend 10 minutes making these. You’re set for weeks of easy dinners that actually support your energy, hormones & body.

Each of these is sized for 4 large chicken breasts. Scale it up or down depending on what your family needs.

5 Easy Chicken Marinades (Freezer Meal Prep)

Five freezer-friendly chicken marinades ready in 10 minutes. Choose your flavour: Lemon Herb Dijon, Honey Buffalo, Creamy Greek Lemon, Teriyaki, or Balsamic Tomato. Prep once, cook all week.

Ingredients
  

Marinade Option #1: LEMON HERB DIJON

  • 2 tbsp dijon mustard
  • 1 tbsp honey
  • 1 large lemon, zest & juice
  • 4 cloves garlic, minced
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh thyme or 1 tbsp dried
  • 2 tbsp fresh oregano or 1 tbsp dried

Marinade Option #2: HOT BUFFALO

  • 1/4 cup your favourite hot sauce I used Frank's hot sauce
  • 3 tbsp soft butter, ghee, or coconut oil
  • 1 tbsp Worcestershire sauce
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika

Marinade Option #3: CREAMY GREEK LEMON

  • 1/4 cup olive oil I love nelson olive oil
  • 2 large lemons, juiced & zested
  • 4 cloves garlic, minced
  • 2 tbsp fresh oregano, chopped  or 1 tbsp dried
  • 2 tbsp fresh thyme, chopped or 1 tbsp dried
  • 2 tbsp greek seasoning

Marinade Option #4: TERIYAKI

  • 1/3 cup 1/3 cup tamari (or soy sauce / coconut aminos)
  • 3 tbsp raw honey
  • 2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tbsp fresh grated ginger or 1 tsp dried
  • 3 cloves garlic, minced
  • 1 tbsp sesame seeds optional

Marinade Option #5: BALSAMIC TOMATO BASIL

  • 1/8 cup Olive Oil
  • 1/4 cup dark balsamic vinegar neapolitan herb dark balsamic is my fav here from Nelson Olive oil, see notes
  • 2 clove garlic, minced
  • 1/4 cup sun dried tomatoes, chopped
  • 1 small sweet onion, chopped
  • 1 tsp-tbsp raw honey
  • 1/8 cup fresh basil, chopped or 2 tbsp dried
  • 2 tbsp fresh oregano, chopped or 1 tbsp dried
  • 2 tbsp fresh thyme, chopped or 1 tbsp dried

Instructions
 

  • Choose your marinade variation above and whisk all ingredients together in a bowl. Place chicken breasts into reusable freezer bags and divide evenly.

  • Pour your chosen marinade into each bag.Squeeze out as much air as possible before sealing. This prevents freezer burn and speeds up thawing. Lay bags flat in the freezer while they freeze. Stack easily without taking up space.

  • When ready to cook, thaw overnight in the refrigerator.

  • Cook using your preferred method:
    Sheet pan: Bake at 375°F for 25-30 minutes until cooked through.
    Grill: Cook at medium-high heat for 6-8 minutes per side.
    Pressure cooker: High pressure for 10-12 minutes, quick release.
    Air fryer: 375°F for 12-15 minutes, shake halfway through.

  • Serve with high-fiber vegetables on the side.

Notes

Storage: Marinades keep in the freezer for up to 3 months. Thaw overnight in the refrigerator before cooking. Do not refreeze after thawing.
Cooking flexibility: These marinades work with any cooking method. Choose what works best for your schedule that day.
