5-Ingredient Lemon Oregano Chicken

This recipe is part of the 5-ingredient recipe series that supports you to eat nutrient-dense foods, in simple ways, while being mindful of food inflation for increased access. This Lemon Oregano Chicken leaves your protein juicy and delicious! Its great to toss your veggies in too.

Ingredients
  

  • 1 lb chicken thighs
  • 2 cloves garlic, minced
  • 1 medium lemon, zest, and juice (divided)
  • 3 tbsp oregano, chopped or use dry
  • 1/2 tsp sea salt

Instructions
 

  • Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  • Add the chicken to a large bowl with the garlic, lemon zest, half of the lemon juice, oregano, and salt. Toss to coat the chicken evenly in the seasonings.
  • Transfer the seasoned chicken thighs onto the baking sheet and cook for 25 minutes or until cooked through. Remove from the oven and drizzle with remaining lemon juice. Season with additional salt if needed. Enjoy! Jo
