Raw, Red Velvet Truffels.

To be perfectly honest I am not sure what to say about these truffles without completely bragging…. haha. I began with the idea that I wanted to create some healthy valentine recipes. I wanted people to indulge in a sweet treat at valentines day that was not a form of chemicals or wax posing as chocolate. As, always I wanted the treat to love your body back, versus causing it harm as many of today’s commercial desserts can.

Red velvet is a common flavor that we love to enjoy and the vibrant red color aligns with the valentines day theme. A good friend of mine loves red velvet and she has made comments about how she wishes she would like the things that are good for her! So, entered the idea to create a sweet red velvet bite that both your mouth and your heart would love.

I choose sunflower butter, as sunflower seeds are extremely high in Vitamin E. Vitamin E is known for its anti-inflammatory and cardiovascular health benefits. Vitamin E has also been studied for its ability to move through the move and neutralize free radical damage and reduces oxidative cholesterol. Sunflower seeds are also packed with Vitamin B’s, magnesium, and selenium which are all heart healthy nutrients. So when I say these truffles will love your heart- I mean it.

They are super easy to make in your food processor or blender making it this a simple and quick recipe to put together for a decent treat for yourself or to give to those you love.  You can roll your truffles in the beetroot powder to enhance the health benefits and get that gorgeous bright pink color on these truffles. Now, my friends, I mentioned above is anti-beet, so I could not create a healthy red velvet truffle and then add beets at the end! SO, you can also roll them in raw cocoa powder which also has minerals which promote mood. So it’s a win-win either way you roll them. From my heart to your’s enjoy!

 

Raw, Red Velvet Truffels

Heart Healthy Red Truffles are the perfect way to enjoy something sweet while nourishing your body.
Prep Time 5 minutes
Total Time 10 minutes
Servings 12 balls

Ingredients
  

  • 1 cups soaked, pitted dates
  • 2 tbsp sunflower seed butter (or any nut butter)
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 1 tsp natural red velvet emulsion any red velvet flavouring will do
  • 1/2 cup coconut flakes
  • 1-2 tsp beet root powder
  • 1-2 tsp raw cocoa powder

Instructions
 

  • Soak dates for 1 hour for best results. Drain, remove pits and add to your blender or food processor.
  • Add in all ingredients except coconut flakes and beet root powder and process until well combined. You will need to push the mixture down with a spatula and process again to ensure everything is well combined.
  • Add the coconut flakes and blend for 1 more minute.
  • Place the mixture in the fridge for 5 minutes to firm up. Meanwhile place your beetroot powder onto a flat plate so you are ready to roll.
  • Using a small ice cream scoop or a tablespoon scoop the mixture and roll it into a ball in your hand, then roll half into the beet powder and the other into the cocoa powder.
  • Pop them all into the fridge for another 5 minutes to firm up and serve.

Notes

These will keep well in an airtight glass container in the fridge for a week or freeze them for a month.
