Easy 2-Ingredient Fruit Leather (Peach & Wildberry Flavors)

I remember when fruit roll-ups were in every kid’s lunchbox… except for mine. I used to beg my mom to buy them but my mom basically said they were “crap”. I remember when fruit-by-the-foot then hit the stores and I begged again, still it was a hard “No!”. I remember being so mad at her for not letting me have them as a kid and I thought she was the meanest mother ever! But as the tables turn and I am a mom, I would never dream of buying them for my kids, funny how things come around.

However, I personally sympathize with their desire to dive into a gummy-type fruit snack and enjoy what the other kids are having. As a mom, for me, this means I just have to be creative. Making homemade fruit leather may sound like a daunting task but I can honestly tell you that you will be amazed how easy it is. Trust me, I work full-time, operate Rejoice, and have two kids so I am all about doing things efficiently.

What I love about this recipe is I can make endless flavor combinations, it’s a great way to use up fruit that might be bruised or a little soft instead of wasting it, and you can omit the little-added sugar! You can just blend the fruit and have 1-ingredient fruit leather.

With back-to-school around the corner, I am using my seasonal summer fruit to whip up a few batches for fall. This makes packing fun snacks in the lunch box a breeze while being a cost-effective way of having fruit leather.

Healthy 2-Ingredient Fruit Leather (Peach & Wildberry)

This is such a fun, cost-effective, and easy way to make lunchboxes fun while avoiding buying the highly processed version.

Servings 12 roll-ups (long-short lenghts)

Ingredients
  

Wild Berry Fruit Leather

  • 6 cups mixed wild berries (thaw a frozen bag for cost savings)
  • 1 tbsp maple syrup (optional)

Pretty Peach Fruit Leather

  • 6 cups peach slices about 7-8 whole peaches or thaw a frozen bag
  • 1 tbsp raw honey (use maple syrup for vegan version or omit)

Instructions
 

  • Preheat the oven to 170 degrees and line a rimmed baking sheet with parchment paper. Blend fruit & natural sweetener in a blender till smooth.
  • Pour mixture onto the baking sheet.
  • Spread the mixture evenly and/or bang the pan on the counter to ensure its well distributed and pop in the oven fo 6-8 hours to dehdrate.
  • Once the fruit is firm, remove the pan and let cool on the counter. Using a pair of sharp scissors, cut the leather into strips keeping the parchment wrapping on the back so you can roll it up.

Notes

Store rolled leathers in an air-tight glass container in the fridge for 2 weeks.
