Double Chocolate Raspberries Creamsicles (Dairy-Free)

One of the greatest sounds you can hear as a kid as you are playing at the park is the sound of the ice cream truck driving by. That cheerful song that entices you to run up and view the colorful board of tasty frozen treats and make the hard decision about which one you will pick. It is amazing how food can bring us back to happy times like this or a certain smell can remind us of memories that are dear to our hearts.

As we get older, we know that pounding back a box of chocolate popsicles might not be the best idea for our health or digestion, however, an ice cold treat on a stick can still bring a smile to everyone’s face on a hot summer’s day.

This recipe is for the young at heart! A quick and healthier version of a summertime classic I used to love as a kid. A positive to making your own frozen treat is you can whip them up quickly in a blender and as a parent, I feel great about the ingredients, I don’t worry about added sugars, artificial colors or flavorings. You can also make multiple flavor combination based on what you have in the house.

Double Berry Chocolate Pops

Chocolate, Berries, and coconut cream are the perfect combination for a rich and creamy frozen treat. Vegan, gluten-free, and free of refined-sugar, this is a nutritious alternative you can enjoy on those hot summer days.
Prep Time 5 minutes
Total Time 9 minutes
Servings 8 popsicles

Ingredients
  

Creamsicles

  • 1 pint raspberries
  • 1 can can of full fat coconut milk
  • 1 tsp good quality honey or maple syrup
  • 1 tsp vanilla
  • 1 tbsp raw cacao powder

Chocolate Coating (optional)

  • 3 oz 70% dark chocolate
  • 1 tbsp freeze dried raspberries

Instructions
 

  • Place the raspberries into a blender and blend until pureed. Add the remaining ingredients and process until smooth
  • Divide mixture into molds and freeze for 4 hours. You can enjoy them just like that or add the optional toppings.
  • Melt the chocolate and pour into a glass cup or measuring cup. You want the cup deep enough to dip the frozen creamsicle into it. Sprinkle with freeze dried raspberries and put in the freezer to set for an additional 15 minutes then enjoy.

Notes

These will keep great in the freezer for 2-3 weeks.
