Prepare the coconut chia layer: Whisk together coconut milk, chia seeds, maple syrup, and vanilla in a bowl. Let sit for 15 minutes to allow chia to expand.
Make the mango layer: Blend mango, collagen, and coconut water until smooth. Set aside.
Prepare the blackberry layer: Blend blackberries with coconut water until smooth. Strain if you prefer no seeds.
Assemble the popsicles: Fill popsicle molds in layers - start with blackberry mixture (1/3 full), then coconut chia mixture (2/3 full), then top with mango mixture.
Add sticks and freeze: Insert popsicle sticks and freeze overnight or for at least 6 hours until solid.
Remove from molds: Run under warm water for 30 seconds to easily remove.
