Ingredients
  

For the Top Layer (Mango Collagen):

  • 1 large mango peeled and chopped
  • 1 scoop collagen peptides
  • 1/4 cup coconut water

For the Middle Layer (Coconut Chia):

  • 1 can 400ml coconut milk
  • 2 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

For the Bottom Layer (Blackberry):

  • 1 cup fresh blackberries
  • 2 tbsp coconut water

Instructions
 

  • Prepare the coconut chia layer: Whisk together coconut milk, chia seeds, maple syrup, and vanilla in a bowl. Let sit for 15 minutes to allow chia to expand.
  • Make the mango layer: Blend mango, collagen, and coconut water until smooth. Set aside.
  • Prepare the blackberry layer: Blend blackberries with coconut water until smooth. Strain if you prefer no seeds.
  • Assemble the popsicles: Fill popsicle molds in layers - start with blackberry mixture (1/3 full), then coconut chia mixture (2/3 full), then top with mango mixture.
  • Add sticks and freeze: Insert popsicle sticks and freeze overnight or for at least 6 hours until solid.
  • Remove from molds: Run under warm water for 30 seconds to easily remove.
