Strawberry Rhubarb Chia Parfait

  • 1 oven safe container

Ingredients
  

  • 2/3 cup Chia Seeds
  • 2 cups Unsweetened Milk or yogurt
  • 1 tbsp Maple syrup or honey
  • 2 cups Rhubarb, chopped
  • 3 cups Strawberries, chopped

Instructions
 

  • Combine the chia seeds, almond milk, and honey together in a bowl and mix well until all clumps are dissolved. Cover and let sit for 5 min until thickened.
  • Preheat oven to 375ºF. Place the rhubarb and strawberries together in an oven-safe dish & bake in the oven for 25 minutes. Remove from oven and set aside to cool.
  • To make parfaits, set out jars, layer in chia seed pudding, and use a slotted spoon to add the strawberry rhubarb mix. Repeat to create layers. Enjoy! Jo
