Berry & Beet Overnight Oats (gluten-free, keto, & vegan options)

Ingredients
  

Beet & Berry Oats

  • 1 cup frozen blackberries
  • 1 tbsp beet root powder you can use 1/4 cup cooked & peeled beets too!
  • 2 cups coconut milk
  • 1/2 cup greek yogurt use coconut for a vegan version
  • 1.5 cups rolled oats use gluten-free oats or hemp seeds for keto as needed
  • 1 tbsp sweetener of choice stevia, honey, maple syrup
  • 1 tsp vanilla
  • 3 tbsp white chia seeds

Optional Toppings to garnish

  • 1 tbsp coconut flakes, unsweetened
  • 1 oz 70% dark chocolate use Lilly's or Krisda brands for a sugar-free chocolate
  • 1/2 small banana, sliced
  • 4-5 additional berries for garnish
  • 1 tsp chia seeds, garnish

Instructions
 

  • Place blackberries, beets or beet powder, milk, yogurt, and vanilla in a blender and process until smooth.
  • Place oats and chia seeds in a medium mixing bowl. Add the blender smoothie to the oats and mix well.
  • Pour the prepared oat mixture into 4 jars with sealed lids. Top with any optional toppings you like or leave it plain. Pop the overnight in the refrigerator.

Notes

Oats will keep in the fridge for up to 3-4 days.
