Healthy, Baked Purple Potato Fries

Who says fries have to be unhealthy? Try this simple recipe to enjoy fries again, while reaping nutritional benefits

Ingredients
  

  • 2 lbs blue or purple potatoes
  • 2 tbsp coconut or avocado oil
  • 1/2 tsp sea salt
  • 1-2 tbsp nutritional yeast
  • 2-3 sprigs rosemary

Instructions
 

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper
  • Cut the potatoes into long strips and lay them on the baking sheet, side-by-side.
  • Mix the remaining ingredients into a bowl and drizzle, brush over the potatoes.
  • Bake in the oven for 30-40 minutes.

Notes

Serve with the homemade ketchup (link above). Potatoes will store in an airtight container in the fridge for 5 days.
