Avocado Ice Cream
Rich, Creamy and Satisfying Avocado Ice Cream. Perfect on its own as a healthy treat or topped with melted dark raw chocolate and chopped nuts.
avocado, peeled and pitted
can of full fat hardened coconut milk
chilled, ideally overnight.
maple syrup of honey
fresh lemon juice
For best results chill the can of coconut milk in the fridge overnight. Pour liquid into a container and use later in a smoothie. Scoop out the cold, hard coconut milk.
Place all ingredients into a high-speed blender
Pour into a glass container, cover, and freeze for 2-4 hours.
If it's too hard, let it sit on the counter for 15 minutes before serving. Scoop into bowls and enjoy.
Reserve the coconut water for smoothies :)
