Preheat grill or griddle to medium-high heat. Line a baking sheet with parchment.
In a small pan over medium heat, melt coconut oil and sauce onion and jalapeño for 4-5 minutes till browned. Remove from heat.
In a large bowl, mix ground bison, onion mixture, cumin, garlic powder, and salt and pepper to taste. Form into 8 burger patties (about 1/4 lb each) on lay on baking sheet.
Sprinkle 1/4 teaspoon of coffee grounds onto the top of each patty and press into patty withe the back of a spoon. Flip burger and repeat on the other side.
Place burgers on heated grill and cook 4-5 minutes per side, or more for desired doneness.
Serve on seedy buns with sliced red onions, avocado and cheese, or wrap in lettuce wraps for a grain-free version.
Notes
cooked patties will keep in an air-tight glass container for 3-5 days.
