Key Lime Energy Balls

If you love the Key Lime Flavour, then you are going to love these energy snack balls.

Ingredients
  

  • 1 cup pitted dates
  • 1/2 cup nut or seed butter of choice I used almond butter
  • 2 medium limes zest & juice
  • 1 tsp vanilla
  • 1/2 cup unsweetened coconut

Instructions
 

  • Zest both limes and juice. Put 1/2 lime zest aside with coconut flakes on a plate for rolling. Add put the rest into a blender or food processor and blend till smooth.
  • Roll into balls 1” and roll into coconut lime mixture ( note based on the nut butter you used if it is very wet due to oil but pop mixture in the fridge to firm a bit before rolling)
