1.5cupsmini mozzarella ballsuse tofu for a vegan version
1/4cupfresh basil leaves
1/2cupbalsamic vinegar
1tbsphoney or maple syrup
Instructions
Using 4" skewers, thread one tomato, Mozza ball, basil leave then finish with another tomato onto each skewer.
Mix honey and balsamic vinegar in a small saucepan pot and bring to a boil. Reduce heat to low until the mixture reduces by about 1/2, about 10 minutes.
Drizzle your reduction over the skewers and serve.
Notes
You can make the skewers a day ahead of time without the reduction on in the fridge in a sealed container.
