Raw, Red Velvet Truffels

Heart Healthy Red Truffles are the perfect way to enjoy something sweet while nourishing your body.

Ingredients
  

  • 1 cups soaked, pitted dates
  • 2 tbsp sunflower seed butter (or any nut butter)
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 1 tsp natural red velvet emulsion any red velvet flavouring will do
  • 1/2 cup coconut flakes
  • 1-2 tsp beet root powder
  • 1-2 tsp raw cocoa powder

Instructions
 

  • Soak dates for 1 hour for best results. Drain, remove pits and add to your blender or food processor.
  • Add in all ingredients except coconut flakes and beet root powder and process until well combined. You will need to push the mixture down with a spatula and process again to ensure everything is well combined.
  • Add the coconut flakes and blend for 1 more minute.
  • Place the mixture in the fridge for 5 minutes to firm up. Meanwhile place your beetroot powder onto a flat plate so you are ready to roll.
  • Using a small ice cream scoop or a tablespoon scoop the mixture and roll it into a ball in your hand, then roll half into the beet powder and the other into the cocoa powder.
  • Pop them all into the fridge for another 5 minutes to firm up and serve.

Notes

These will keep well in an airtight glass container in the fridge for a week or freeze them for a month.
