1tspnatural red velvet emulsionany red velvet flavouring will do
1/2cupcoconut flakes
1-2tspbeet root powder
1-2 tspraw cocoa powder
Instructions
Soak dates for 1 hour for best results. Drain, remove pits and add to your blender or food processor.
Add in all ingredients except coconut flakes and beet root powder and process until well combined. You will need to push the mixture down with a spatula and process again to ensure everything is well combined.
Add the coconut flakes and blend for 1 more minute.
Place the mixture in the fridge for 5 minutes to firm up. Meanwhile place your beetroot powder onto a flat plate so you are ready to roll.
Using a small ice cream scoop or a tablespoon scoop the mixture and roll it into a ball in your hand, then roll half into the beet powder and the other into the cocoa powder.
Pop them all into the fridge for another 5 minutes to firm up and serve.
Notes
These will keep well in an airtight glass container in the fridge for a week or freeze them for a month.
