Heirloom Tomato Caprese Skewers

You have most likely seen versions of these skewers before. These are one of my go-to appetizers as they are simple, easy and highlight beautiful tomatoes. For a holiday potluck or New Year’s eve appetizer, these are one of my favorites bites to lighten things up. Any cherry tomatoes will do but I like to get my hands on heirloom varieties such as San Marano, Brandywine, lollypop or gardeners delight. Yummy!

capreaseTomatoes are a very nutrient-rich food as they are a great source of a phytonutrient called lycopene. Lycopene is an antioxidant that has received a great deal of press in relation to promoting healthy immune function and supporting bone and heart.  One cup of tomatoes has 24.66mg of Vitamin C, 426.60 mg of potassium, and 14.22mg of Vitamin K.

Heirloom Tomato Caprese Skewers

Simple, easy and packed with antioxidants, these little skewers are a perfect healthy appetizer for your next party.

Servings 24 skewers

Ingredients
  

  • 1 pint mixed cherry tomatoes
  • 1.5 cups mini mozzarella balls use tofu for a vegan version
  • 1/4 cup fresh basil leaves
  • 1/2 cup balsamic vinegar
  • 1 tbsp honey or maple syrup

Instructions
 

  • Using 4" skewers, thread one tomato, Mozza ball, basil leave then finish with another tomato onto each skewer.
  • Mix honey and balsamic vinegar in a small saucepan pot and bring to a boil. Reduce heat to low until the mixture reduces by about 1/2, about 10 minutes.
  • Drizzle your reduction over the skewers and serve.

Notes

You can make the skewers a day ahead of time without the reduction on in the fridge in a sealed container.
