Healthy Chocolate Wild Berry Waffles

MMMMM Waffles! Typically our breakfasts consist of smoothies and overnight oats for those busy weekday mornings. For Sunday morning breakfasts I take a little extra time to slow down, enjoy a beautiful breakfast, and connect with each other. Making waffles a bit more healthy is simply by using whole-foods. They turn out super yummy and had added nutrition, another win-win!

 

There is always this impression that “healthy” eating needs to be restrictive, boring, and tasteless. My philosophy in working with clients is that you should LOVE the food you eat and the food should LOVE your body back. Simple as that! So forget boring rice cakes and dive into a plate of beautiful waffles. For added fiber, I like to toss in 1 tbsp of ground flax or chia seeds too. Also if you are looking to reduce sugars then drizzling natural nut butter ontop of these waffles instead of maple syrup is another beautiful option and a great way to add healthy fats and plant-based proteins.

Healthy Chocolate Wild Berry Waffles

These Chocolate waffles paired with berries and dark maple syrup are so tasty! There are gluten-free and vegan swaps as needed. Happy Waffling!

Ingredients
  

Chocolate Waffles

  • 1 1/2 cups whole wheat, spelt or gluten-free flour
  • 2 teaspoons baking powder
  • 2 large organic eggs a "flax-egg" is a great vegan alternative
  • 1/4 cup raw cacao powder
  • 1/4 cup raw cacao nibs
  • 1 tbsp liquid vanilla
  • 1 3/4 unsweetened almond milk
  • 1 tbsp melted coconut oil
  • 1/4 cup organic, greek yogurt coconut yogurt is a great vegan alternative

Toppings

  • 1 cup mixed berries (your choice)
  • 1/4 cup dark maple syrup
  • 1 tbsp organic icing sugar (optional)

Instructions
 

  • Mix all dry batter ingredients in a bowl until combined.
  • Add the liquid ingredients and whisk until combined.
  • Heat up your waffle iron and take 1/2 cup of batter and place into the iron for 5-7 minutes (based on your iron) until golden brown.
  • Sprinkle icing sugar and top with fresh berries and syrup and enjoy.
