Sometimes the simplest ingredients can bring us the most comfort. When we want fries, this is my go-to recipe. It is quick, easy, and uses basic ingredients that enhance the nutrition of this perfect vegetable side dish. Blue or purple potatoes add color, phytonutrients, and interest to any plate.
If you are unfamiliar with nutritional yeast, it is a great way to get that parmesan cheese flavor while keeping the fat content low. Nutritional yeast also is very high in vitamin B’s and iron which enhances the nutritional value of the food.
I like to make a big sheet of these potatoes on the weekend, by meal prepping I have fries for dinner that night and potatoes to add to salads or protein bowls throughout the week.
